This easy zesty dressing will brighten any salad. You can also use this as a marinade (just use avocado oil or other high heat oil instead).
Ingredients
1/4 cup lemon juice, fresh
1-1 1/4 cup extra virgin olive oil (or sub avocado oil)
3-4 cloves garlic, minced
- Spices
1 tsp dried oregano
1/4 tsp ground ginger
1/2 tsp salt + more to taste
Pinch of black pepper
- For serving
On salads
As a chicken marinade (sub olive oil with avocado oil or coconut oil)
Directions
- In a 2-cup container, combine all ingredients.
- Stir and serve.
- Salt to taste.
Notes
- The fastest way to stir/emulsify is to use a latte frother. You can get one from amazon. Or you can whisk ingredients together.
- If using for marinade, use avocado oil instead of extra virgin olive oil.
- If solidified after storing in fridge, allow to liquify at room temperature on counter. You can also run warm water over the container or place the container in a bowl of warm water.
