Ingredients
5-6 ripe tomatoes, chopped*
1 can coconut milk, with fat*
4-6 cloves garlic, minced
1/2 onion, diced
1/2 fresh basil leaves
1/2-1 tsp fresh lemon juice
- Spices
2 tsp dried oregano
1 tsp salt + more to taste
Pinch of black pepper
- For serving
With gluten free bread
With sautéed spaghetti squash + zucchini
As pizza sauce
Directions
- Heat medium-sized pot/sauce pan to medium heat.
- Sauté onions until fragrant + translucent.
- Add garlic, cook for 1 minute.
- Add tomatoes, oregano, and salt.
- Mix together and cook for 3-4 minutes.
- Add coconut milk and basil leaves.
- Bring to boil.
- Reduce to simmer and cook for 20-25 minutes.
- Add lemon juice.
- Adjust salt/pepper to taste.
- Blend until smooth with immersion blender.
- Serve warm + store in airtight container for up to 7 days in fridge.
Notes
- *Tomatoes: Fresh is great, but you can also sub with 2 14-oz cans of diced tomatoes. I use Muir Glen Organic Diced Tomatoes, No Salt.
